So I know Christmas is approaching but technically its still fall so lets have one more pumpkin recipe before we switch to winter ones! This week I want to share this amazing pumpkin protein pancake because I have been absolutely obsessed with it and I’m sure you will too. Now, because they are protein pancakes, that does require a scoop of protein powder (which can be pretty expensive). Although it is expensive it really does last you a long time, but you can also get it in bulk from Bulk Barn at a reasonable price.
- 2 tablespoons pumpkin puree
- 4 tablespoons liquid egg whites
- ¼ teaspoon pumpkin pie spice
- 1 scoop whey protein power
I used a vanilla ice cream flavoUred protein powder with my recipe. It definitely did sweeten it up but it was still delicious. I would stick to a vanilla flavoUred protein but you can use what you’d like.
- Heat frying pan with olive oil/coconut oil in pan
- Add batter to pan, fitting your desired size
- Flip when bottom of pancake is golden
- Serve with maple syrup
There are a couple different of options to top the pancakes with. You could use Greek yogurt, maple syrup, a protein paste made from protein powder and a little touch of water, etc. The great thing about this recipe is that not only does it taste delicious but it’s loaded with protein to keep you feeling full throughout the day!
